Grown in Umbria, Italy, Farro is a type of ancient spelt grain durum wheat that has unique properties when cooked. This wheat has been around since the ancient days of the Celts, Egyptians, and the Etruscans. It is a soft wheat, that, compared with other types of grains, has a higher protein content and is richer in vitamins. There are 250 varieties of spelt. The Felicetti family uses one specific variety from an exclusive producer in Umbria. During cooking, it releases scents of hazelnuts and cooked eggplant. Its texture is firm and slightly crisp with a flavor that combines hints of peanut butter and red dates. 100% organic! Especially good for soups as this pasta does not absorb liquids as much as normal wheat varieties.
Ingredients: Organic Emmer Wheat (Triticum Dicoccum) flour and water. Cook time is 9 minutes.
